1-1/2 pounds skirt steak Sea salt and black pep­per

PREPA­RA­TION

Heat grill on high. Sea­son steak gen­er­ously with salt and pep­per. Cook steak three to four min­utes per side for medium rare. Let steak rest for five to 10 min­utes be­fore thinly slic­ing.
