DELICIOUS DELICATA RINGS

3 delicata squash, halved

width-wise Olive oil, for drizzling Flake salt, such as Maldon Freshly ground black pepper Arrange oven racks and preheat oven: Place one oven rack in the top third of the oven and another in the bottom third, then preheat oven to 425 F (220 C). Prepare the squash: Use a pointy teaspoon to scrape the seeds and any stringy bits from each squash half and discard (or save for compost). Slice the squash into 1/2-inch (1.25-cm) rings, discarding the stem ends. Prep the squash for roasting: Drizzle 1 to 2 tbsp (15-30 mL) of olive oil onto each baking sheet and spread it around with your fingers to coat the pans. Lay the delicata rings flat in a single layer on each sheet and lightly drizzle with olive oil. Season with salt and pepper. Roast the squash: Cook for 10 to 15 minutes until the rings begin to brown on the bottom. Then flip the rings to the other side, season again, and swap the pans, returning them to roast for another 10 to 15 minutes until the squash is tender and deeply golden in spots. Test by seeing if you can pierce them with a fork — if you can, they are read. Serve 4. Serve warm for a delicious snack or side dish.
