This P.E.C. bak­ery, a reg­u­lar at the Ever­green Brick Works farm­ers’ mar­ket ev­ery Satur­day, bakes a su­per-dense 100 PER CENT RyE, nat­u­rally leav­ened and sized like one of the tablets of the Ten Com­mand­ments. It’s baked in a wood-burn­ing oven two days be­fore mar­ket to give the loaf time to cure— like how a steak fin­ishes cook­ing af­ter it’s off the grill.
