> WINE PAIRING

2013 Henry of Pelham Special Late Harvest Vidal (VQA Niagara) #395228 $19.95/ 375ml bottle: The luscious flavours of candied citrus and tropical fruit in this late-harvest wine match the sweetness of the pudding perfectly. Meanwhile, the zippy acidity inherent to Vidal cuts the richness of the dessert, leaving the palate clean and refreshed. But that’s just the beginning. As the succulent flavours of sweet orange and pineapple unfurl, they contrast the sea salt and bitter chocolate garnish to create a sophisticated mood and mouth feel. Plus, the wine’s subtle whisper of white blossom and a whiff of bitter orange oil set off the bergamot orange note from the Earl Grey quite elegantly. In short, the complementary complexity of this pairing lifts the chocolate and Earl Grey pots from mid-week comfort food to impressive dinner-party fare. —Carolyn Evans Hammond
