ARC

Upscale dining featuring the flavors of the ocean and the stories of local farmers

A BENCHMARK OF RELAXED CONTEMPORARY LUXURY, the landmark Fairmont Waterfront’s new ARC is becoming synonymous for i ts timeless appeal, the servers’ seamless service and the cellar’s extensive wine selection. Aptly named for its stunning new design – ARC instills a sense of energy and connectivity.

Within the kitchen, under the talented direction of executive chef Dana Hauser, dishes burst with natural flavour. Thanks to Hauser and Chef Alessandro Vianello’s combined passion for respecting the purest seasonal ingredients, then creating them according to the shared dictates of her vision - simple, fresh, local and handcrafted - the carte du jour is an exciting culinary journey through the best of authentic Westcoast cuisine.

Dinner plates are full of flavourful compositions that stay true to ARC’s concept, such as i ts signature local Dungeness crab or spot prawns.

“I celebrate what’s in season and enhance it with simple flavours… it’s not complicated,” says the transported Newfoundlander, adding ARC is Ocean Wise certified.

ARC is an exemplary seasonal, sustainable Northwest story with its rooftop garden with organically grown seasonal produce and herbs that end up on your plate. In addition, its beehive brings into being a delicious honey lager.

The glamorous modern bar and lounge is fun for sipping culinary inspired cocktails or handcrafted local beers, while listening to some fabulous local musical talent.

With its floor-to-ceiling windows taking in the magnificent downtown waterfront landscapes, ARC is the perfect way to celebrate West Coast urban artisan food in arguably one of the most spectacular settings in the city.
