His finely tuned dishes are rooted in clas­sic French cook­ing and Chef de Cui­sine Mont­gomery Lau puts his own stamp on them.

“Th­ese are dishes that peo­ple are fa­mil­iar with but taken up a notch,” says Lau, whose Asian in­flu­ence cre­ates a sweet and sour con­nec­tion that is gar­ner­ing rave reviews.

From shop­ping in food mar­kets in Hong Kong with his mother, to head­ing Canada’s only JeanGe­orges’ restau­rant, Lau brings a wealth of ex­pe­ri­ence to the Shangri-La. He sharp­ened his gas­tro­nomic skills along­side some of the best chefs in the city.
