Rose­mary Sugar

Flavoured sug­ars are ridicu­lously fast and easy, and make a tasty, thought­ful gift when pack­aged in a vin­tage jar or glass sugar shaker.

1. In the bowl of a food pro­ces­sor, pulse a few cups of gran­u­lated white sugar with a cou­ple sprigs of rose­mary, or try adding strips of orange zest or snipped vanilla beans. You don’t need to blend them com­pletely, just enough to help the rose­mary (or cit­rus, or vanilla) re­lease its aroma. Let the sugar sit for at least an hour, or up to a day, then shake through a sieve to get rid of any solids. Pack­age up the scented sugar and in­struct the re­cip­i­ent to use it in cook­ies, sprin­kled on cakes, stirred into tea... Once it’s on your shelf, you’ll dream up all kinds of uses.
