The extensive menu at the newly revamped Ox Bar de Tapas is full of true Spanish tapas, from baked dates and marinated olives to large pans of paella. None of these, however, are more crave-worthy than the restaurant’s take on traditional patatas bravas. Here, the humble potato is served up Spanish-style in a dish that ticks all the boxes of something you will hunger for. Baby potatoes are smashed and deeply crisped, with craggy edges that hold extra crunch. These are tumbled onto a plate and topped with a healthy dollop of aioli and Ox’s bravas sauce—made from tomatoes, it’s the perfect foil for all that deep-fried richness. Enjoy with a glass of sherry for a truly Spanish moment (page 54).
