The ex­ten­sive menu at the newly re­vamped Ox Bar de Tapas is full of true Span­ish tapas, from baked dates and mar­i­nated olives to large pans of paella. None of th­ese, how­ever, are more crave-wor­thy than the restau­rant’s take on tra­di­tional patatas bravas. Here, the humble potato is served up Span­ish-style in a dish that ticks all the boxes of some­thing you will hunger for. Baby pota­toes are smashed and deeply crisped, with craggy edges that hold ex­tra crunch. Th­ese are tum­bled onto a plate and topped with a healthy dol­lop of aioli and Ox’s bravas sauce—made from to­ma­toes, it’s the per­fect foil for all that deep-fried rich­ness.
