• Prime Rib City (p 120): Slow cooked at a low tem­per­a­ture, AAA prime rib is roasted with French mire­poix (diced veg­eta­bles) and sea­soned at spe­cific times dur­ing the cook­ing process for peak flavour. • O’Shea’s (p 118): The Week­ender Spe­cial is spiced with a grainy mus­tard rub and roasted all day. Cer­ti­fied Angus Beef prime rib is served au jus. • Villa Caruso (p 121): Pre­par­ing their AAA prime rib takes four-steps: mar­i­nat­ing, oven roast­ing, steam­ing to a pre­cise tem­per­a­ture and ‘fin­ish’ roast­ing.
