Chef Steve Gonzalez, who has brought the city such venerable establishments as Valdez and Baro, and most recently Petty Cash, talks about his favourite ingredient, and a seasonal indulgence.
How did you get your start as a chef?
My first chef job was at an Italian restaurant in downtown Toronto. I was 30 years old and they were friends of friends who needed a chef and they gave me my first trial.
What is your favourite dish at Petty Cash?
The hummus garden, it’s fresh and fun. I love using vegetables right now.
What is your favourite ingredient to cook with?
Cilantro. You can use it for fresh items, you can use it for cooking.
What is the one kitchen tool you can’t live without?
A sharp knife.
What is your current culinary indulgence?
During the end of summer/ beginning of fall, I’m all about the corn! I love using it in as many dishes as I can.
