Chef Steve Gon­za­lez, who has brought the city such ven­er­a­ble es­tab­lish­ments as Valdez and Baro, and most re­cently Petty Cash, talks about his favourite in­gre­di­ent, and a sea­sonal in­dul­gence.

How did you get your start as a chef?

My first chef job was at an Ital­ian restau­rant in down­town Toronto. I was 30 years old and they were friends of friends who needed a chef and they gave me my first trial.

What is your favourite dish at Petty Cash?

The hum­mus gar­den, it’s fresh and fun. I love us­ing veg­eta­bles right now.

What is your favourite in­gre­di­ent to cook with?

Cilantro. You can use it for fresh items, you can use it for cooking.

What is the one kitchen tool you can’t live with­out?

A sharp knife.

What is your cur­rent culi­nary in­dul­gence?

Dur­ing the end of sum­mer/ be­gin­ning of fall, I’m all about the corn! I love us­ing it in as many dishes as I can.
