Robert Belcham is prac­ti­cally roy­alty in Van­cou­ver. The chef be­hind Cam­pag­nolo (page 102) and Cam­pag­nolo Roma (page 98) has the Mi­das touch when it comes to food. He de­signed the Monarch Burger now on the menu at The Amer­i­can (page 102), and it’s fit for a king or queen: slow-aged lo­cally grown beef, ground fresh daily and shaped into pat­ties. Per­fectly browned buns made in-house each day. Crisp let­tuce, sea­soned toma­toes, bread-and-but­ter pick­les and se­cret sauce. And on the side, ei­ther hand-cut French fries, per­fect pou­tine (made with cheese curds and gravy flown in fresh from Montreal), or kale Cae­sar salad.
