Christophe Adam loves éclairs, and he hopes Cana­di­ans do, too. The charis­matic chef re­cently opened North Amer­ica’s first L’Éclair de Génie (page 106) right here in Van­cou­ver. No doubt it will quickly be­come as suc­cess­ful as his shops in France, Italy, Ja­pan, Hong Kong, Rus­sia and Le­banon, as Van­cou­verites dis­cover the ir­re­sistibly light and flavour­ful pas­tries. Adam as­sured us he left the calo­ries be­hind in his home­land of France—but this might, pos­si­bly, be a mis­trans­la­tion borne of wish­ful think­ing on our part.
