A Sweet Story
Christophe Adam loves éclairs, and he hopes Canadians do, too. The charismatic chef recently opened North America’s first L’Éclair de Génie (page 106) right here in Vancouver. No doubt it will quickly become as successful as his shops in France, Italy, Japan, Hong Kong, Russia and Lebanon, as Vancouverites discover the irresistibly light and flavourful pastries. Adam assured us he left the calories behind in his homeland of France—but this might, possibly, be a mistranslation borne of wishful thinking on our part.
