A short walk from the Van­cou­ver Con­ven­tion Cen­tre, Cop­per Chim­ney (page 86) of­fers a de­par­ture from ho­tel din­ing norms, serv­ing au­then­tic In­dian cui­sine in a cozy set­ting. From the tucked-away grill and tan­door clay oven come clas­sics with a mod­ern twist, rang­ing from yo­gurt-mar­i­nated sal­mon to fenu­greek lamb chops to thali shar­ing plat­ters. Naan and stuffed breads are as var­ied and tasty as the chut­neys and sauces that go along, while house favourites in­clude achari chicken tikka, tan­doori-roasted pa­neer and cala­mari pakora. Here, too, is a wealth of gluten- and dairy-free op­tions, plus cock­tails high­lighted by a strong gin se­lec­tion. No sur­prise, happy hour (week­days from 3 to 6 p.m.) is well at­tended.
