There are so many tex­tures and fresh bursts of flavour in this dish, it’s hard to be­lieve it con­tains no dairy or gluten. Hokkaido pump­kin, roasted and puréed, re­place the stan­dard po­tato. Oven-dried toma­toes, onion crisps and steamed or­ganic broc­coli add hefty taste and va­ri­ety. Chef de Cui­sine Axel Obeth notes that game hen is even less fatty than salmon, mak­ing it a per­fect fit for the ho­tel, with its fo­cus on health and well­ness.
