Duo of Her­itage An­gus Nat­u­ral Beef

The Grill & Vine is of­ten known for its ar­ti­san hearth­stone pizza and breads. But Ex­ec­u­tive Chef Brad Cum­ming also does mas­ter­ful meats. Most of the prod­uct comes from Two Rivers Spe­cialty Meats, a pi­o­neer­ing pur­veyor of fine lo­cal meats that are free of an­tibi­otics, hor­mones and chem­i­cal ad­di­tives. This su­per-flavour­ful duo of softly braised short rib and seared flat iron — from ranch cat­tle that are trace­able from birth pas­ture to plate — gets a side of rich­ness from fluffy Ro­man gnoc­chi bathed in tomato and greeno­live ragu. “When you’re cook­ing with real food, it all falls into place,” Cum­ming says. “Whole­some sourc­ing may not be for ev­ery­one, but for me it re­ally comes easy.” 604-935-4344 | gril­land­
