外滩华尔道夫酒店的法餐厅,新上任的年轻法国主厨Jean-Philippe Dupas来自巴黎。他的法餐走传统法餐的路线,但是强调丰富口味的酱汁与创意摆盘,让沉闷的传统法餐焕发出新意。

餐厅环境优雅,用餐时很有私密感。完全无遮挡的厨房全景是用餐时的“佐餐”美景。主厨新上任,第一版新菜单以传统口味与食材为主,让人尝到传统底子里的新派味道。前菜一向是法餐让人着迷的环节,前菜选择不算太多,但是每道都精彩。法式鹅肝酱处理得细腻,巧妙的是以红酒酱做成啫喱,抹好后再卷起鹅肝酱做成雪茄样式,好看又好吃。而澳洲和牛鞑靼则以调味南美辣椒与鱼子酱铺上,同样是以新派装盘呈现出经典口味,叫人容易接受。主菜一样让人有持续的惊喜,原因在于酱汁。波士顿龙虾的龙虾浓汁、海鲜烩饭的海鲜汁、澳洲和牛牛柳的黑松露汁以及海鲈鱼的甜艾酒汁都做得扎实有力,更建议以餐酒来配,会更出效果。有单独的七道菜 Tasting Menu(还可配酒)组合,很具性价比,对于第一次尝试新主厨的菜是很好的选择。

Elegant decor, comfortable seats, private compartments and the open kitchen make Pelham’s a great dining place. Thanks to the new chef, traditional delicacies are showing new flavours. More changes can be expected.

Foie Gras and Wagyu Beef Tartare are great appetizers, both tasty and visually impressive. Amazing sauces give Boston Lobster a fabulous taste. The Tasting Menu with 7 courses is a good choice, too.
