Dabing or Shanghai pancake

China Daily (Canada) - - SHANGHAI -

Often dubbed the “big brother” of the “big four”, this snack usually only comes in two shapes which indicate what they are filled with. The round ones are stuffed with melted sugar and white sesame while the rectangular ones are salty and sometimes filled with green onions. Foodies will say that these pancakes must be consumed within 10 minutes after they leave the oven, else what should be golden and crispy would become

just “regular dough”.
