Youtiao or fried dough sticks

There are a num­ber of ways to eat a dough stick. Some like to wrap it with pan­cakes, some like to soak it in soy milk, while oth­ers cut it into small pieces be­fore dip­ping it into soy sauce. Some peo­ple, in­clud­ing the city’s fa­mous co­me­dian Zhou Libo, have a spe­cial pen­chant for the two ends of the dough sticks, which they be­lieve are par­tic­u­larly crunchy. Since 2008, the fast food chain KFC has in­cluded fried dough sticks on its break­fast menus. But what has been mar­keted by KFC as “safe sticks” has been far less tempt­ing

than the of­fer­ings from street food pedd­lars.
