Chef Kang Jing Peng from No­ble Court cre­ates a se­lec­tion of hairy crab dishes fea­tur­ing crabs from Lake Tai Wu. Aside from the tra­di­tion­ally steamed crab, there are a va­ri­ety of clas­sic dishes rang­ing from braized baby crab with Si Chuan spicy sauce to stir-fried hairy crab meat and roe with egg, crispy con­poy, and bean sprouts. Hairy crab is only avail­able for a lim­ited pe­riod
