Hairy crab is a cher­ished sea­sonal del­i­cacy in south­ern Chi­nese Jiang­nan cui­sine. Sourced each au­tumn from the icy wa­ters of Yangcheng Lake near Suzhou, the ma­ture hairy crabs are plump, sweet, and suc­cu­lent. This au­tumn, en­joy Chef Bryan’s cre­ative menu of Yangcheng hairy crab cre­ations, such as wok-fried king scal­lops with hairy crab roe and pan-fried bean curd, as well as braised dried fish maw broth with hairy crab and con­poy. Each ex­quis­ite dish is served in tra­di­tional style with gin­ger vine­gar and Long­gan gin­ger tea.
