Castella Cake

The Ja­panese love sweets, and the Castella is a fluffy, dairy-free sponge that they can’t get enough of. Made from eggs, flour and sugar, some­times with honey, matcha or other flavour­ings, the cake is said to have been brought to Ja­pan by 16th-cen­tury Por­tuguese mer­chants in Na­gasaki. Bun­meido, founded in 1900 in Ni­hon­bashi, Tokyo, still makes Castella cakes by hand us­ing the orig­i­nal recipe and high-qual­ity Mi­takoji eggs known for their rich flavour.
