I be­lieve no one does pizza bet­ter than the Ja­panese. I also think the best mea­sure of a pizze­ria is its ex­pres­sion of a sim­ple clas­sic such as the margherita. You have to rely only on wa­ter, heat and the qual­ity of the few in­gre­di­ents used. Ta­maki does it right. From Ok­i­nawa he has trained with the best and his small spot in Ak­a­banebashi has the right mix of jazz (Coltrane), cult wines (Roberto Vo­erzio from Pied­mont, Italy) and in­cred­i­ble pies to make it my favourite pizze­ria in Tokyo, hands down. The bonus is Ok­i­nawa pick­les – don’t for­get to or­der them.
