I believe no one does pizza better than the Japanese. I also think the best measure of a pizzeria is its expression of a simple classic such as the margherita. You have to rely only on water, heat and the quality of the few ingredients used. Tamaki does it right. From Okinawa he has trained with the best and his small spot in Akabanebashi has the right mix of jazz (Coltrane), cult wines (Roberto Voerzio from Piedmont, Italy) and incredible pies to make it my favourite pizzeria in Tokyo, hands down. The bonus is Okinawa pickles – don’t forget to order them.
