I love pizzas and my obsession increases exponentially whenever I am in Japan. PST is a newish Neapolitan-style pizzeria in Tokyo. The chef uses Japanese cedar wood chips, which cleverly lend the slightest hint of bitterness to the pizza. One of the most memorable pizzas I’ve had was topped with Ishikawa clams. I like going there for an early dinner before strolling over to the nearby low-alcohol cocktail temple, Gen Yamamoto.
