I love piz­zas and my ob­ses­sion in­creases ex­po­nen­tially when­ever I am in Ja­pan. PST is a newish Neapoli­tan-style pizze­ria in Tokyo. The chef uses Ja­panese cedar wood chips, which clev­erly lend the slight­est hint of bit­ter­ness to the pizza. One of the most mem­o­rable piz­zas I’ve had was topped with Ishikawa clams. I like go­ing there for an early din­ner be­fore strolling over to the nearby low-al­co­hol cock­tail tem­ple, Gen Ya­mamoto.
