煎 梭子蟹

梭子蟹洗净,切下蟹钳,打开蟹盖,剪去鳃、脚尖等,切成小块;剪去蟹钳上的刺,用刀拍两下;姜、蒜切片,葱白切段,彩椒切丝,备用;在蟹切口处沾上生粉,蟹盖上也撒上少许生粉,以锁住鲜味;水、生粉、生抽、美极鲜酱油、胡椒粉、麻油各适量,调成料汁备用;锅烧热,下油,放入蟹两面煎至生粉呈金黄色,放入姜片,最好将姜片贴在锅边以煎出姜味,煎至蟹将熟时,加盖,用蒸汽将蟹蒸熟;开盖,倒入料汁,翻炒均匀,盖盖焖一会儿;开盖,放入姜、蒜片、葱白段、彩椒丝,盖盖焖1分钟左右即成。

这是一道广东风味菜,蟹肉饱满厚实,焦香鲜甜。
