椒盐帝王蟹腿

将小腿剪成小段,没肉的脚尖不用,两侧各剪一刀,使蟹腿成两爿;控干水分,撒上少许生粉,拌匀;取小碗,磕入蛋清,加少许面粉、清油,搅拌,加少许水,调成浆,倒入蟹小腿中,使其均匀地裹在蟹小腿上;青椒切圈、红椒切粒、干葱头切小粒、蒜切蓉备用;起油锅,油热后放入蟹,炸成金黄色,捞出,沥干备用;取小碗,加少许胡椒粉、盐、五香粉、十三香,调成椒盐备用;另起锅烧热,加少许油,放入青椒圈、红椒粒、干葱粒、蒜蓉炒香,倒入蟹小腿、椒盐,煸炒出香味,出锅装盘即成。

这道菜外壳酥脆,椒香四溢,内里软嫩鲜美,虽说是吃蟹腿,美味之处却在使人吮指回味的脆壳。
