银鱼跑蛋

银鱼洗净,用厨房纸吸去表面水分,放入碗中;加少许胡椒粉、盐、糖、料酒,拌匀,腌制片刻;切一点葱花放入腌好的银鱼中,然后磕入4枚鸡蛋,搅匀;锅烧热,下油,再加一点麻油,蛋液中加一点盐,倒入锅中,煎至熟度超过 60%时翻面,煎熟,出锅装盘即成。

松软蛋饼中弹牙的银鱼是平淡生活里不经意邂逅的惊喜,相比番茄,银鱼才是鸡蛋的完美拍档。
