A New Act at Zafran

If you missed Zafran’s (Base­ment, 43-55 Wyn­d­ham St., Cen­tral, 2116-8855, zafran.com. hk) “The­atre of Ta­pas” tasting manu, you’re out of luck—the Span­ish resto has com­pletely re­set the stage with a new 30-dish à la carte menu cre­ated by new ex­ec­u­tive chef Pere Moreno. Luck­ily, the menu has the same bold fla­vors and unique in­gre­di­ents that pre­vi­ously wowed us at Zafran, with rich herbs and spices evok­ing the earthy in­flu­ences of Morocco as well as the fresh sea­side fare of the Mediter­ranean. Ex­pect gen­er­ous pinches of saffron (only fit­ting given that “azafrán” is Span­ish for “saffron”) through­out, and in­flu­ences from all over, from Gali­cian oc­to­pus on pa­prika hum­mus ($180) to prawn tartare with sea as­para­gus ($190) and black paella ($320) with an in­tense fla­vor im­parted by Span­ish red prawns and cut­tle­fish ink.
