For many years, Hong Kong Tatler has been synonymous with fine dining—the crème de la crème of culinary expertise, the pinnacle of premium dining experiences and the most exquisite, exclusive ingredients and wines. We have always been all about enjoying the very best in life, and our combined 143 years of history and experience across our Asia Tatler Best Restaurants titles (in Singapore, Malaysia, China, Thailand, the Philippines, Indonesia and, soon, Taiwan) is testament to how well we know how to eat.
But tastes are ever-changing. The definition of fine dining is no longer what it was 50, 15 or even five years ago. We’ve seen it evolve and take different forms, absorbing elements that deviate from the status quo, allowing us to challenge as well as champion the waxing and waning of trends that contribute to a global appetite. In Hong Kong in particular, we’re seeing a rejuvenation of the dining scene that has shifted its focus towards food that’s fun as well as fantastic—and of chefs and restaurateurs that are becoming more environmentally, socially and culturally minded in the pursuit of great flavours and edible stories to tell. This is why, for the first time in the history of the guide, we’re introducing a brand new award: Local Champion. To us, the recipient of this award has made a real contribution in promoting our city’s food culture—both locally and on the international stage—and ultimately making all of us in Hong Kong proud.
Each of the awardees in this book were voted upon by our esteemed panel of local experts (see page 12), who live and breathe this city and have eaten more than their fair share of meals over the last year. Together with the Tatler team, they have put their weight behind five other categories that highlight those at the top of their class: Best New Chef, Best Pastry Chef, Best Interior Design, Best Cocktails and Restaurateur of the Year.
