For many years, Hong Kong Tatler has been syn­ony­mous with fine din­ing—the crème de la crème of culi­nary ex­per­tise, the pin­na­cle of pre­mium din­ing ex­pe­ri­ences and the most ex­quis­ite, ex­clu­sive in­gre­di­ents and wines. We have al­ways been all about en­joy­ing the very best in life, and our com­bined 143 years of his­tory and ex­pe­ri­ence across our Asia Tatler Best Restau­rants ti­tles (in Sin­ga­pore, Malaysia, China, Thai­land, the Philip­pines, In­done­sia and, soon, Tai­wan) is tes­ta­ment to how well we know how to eat.

But tastes are ever-chang­ing. The def­i­ni­tion of fine din­ing is no longer what it was 50, 15 or even five years ago. We’ve seen it evolve and take dif­fer­ent forms, ab­sorb­ing el­e­ments that de­vi­ate from the sta­tus quo, al­low­ing us to chal­lenge as well as cham­pion the wax­ing and wan­ing of trends that con­trib­ute to a global ap­petite. In Hong Kong in par­tic­u­lar, we’re see­ing a re­ju­ve­na­tion of the din­ing scene that has shifted its fo­cus towards food that’s fun as well as fan­tas­tic—and of chefs and restau­ra­teurs that are be­com­ing more en­vi­ron­men­tally, so­cially and cul­tur­ally minded in the pur­suit of great flavours and ed­i­ble sto­ries to tell. This is why, for the first time in the his­tory of the guide, we’re introducing a brand new award: Lo­cal Cham­pion. To us, the re­cip­i­ent of this award has made a real con­tri­bu­tion in pro­mot­ing our city’s food cul­ture—both lo­cally and on the in­ter­na­tional stage—and ul­ti­mately mak­ing all of us in Hong Kong proud.

Each of the awardees in this book were voted upon by our es­teemed panel of lo­cal ex­perts (see page 12), who live and breathe this city and have eaten more than their fair share of meals over the last year. To­gether with the Tatler team, they have put their weight be­hind five other cat­e­gories that high­light those at the top of their class: Best New Chef, Best Pas­try Chef, Best In­te­rior De­sign, Best Cock­tails and Restau­ra­teur of the Year.
