ach year, t he Co­tai Strip i s quite un­like how it was a mere 12 months be­fore—the birth of ev­er­more i mpres­sive and flashy casino-re­sorts and ho­tels, spring­ing up along the thor­ough­fare li ke plants af­ter a l ong win­ter, can cer­tainly over­shadow those al­ready i n ex­is­tence. We won­dered: would Pearl Dragon, t he younger sib­ling in Stu­dio City, nudge t he el­der Jade Dragon off its Top 20 perch af­ter so many years?

Spoiler alert: With Tam Kwok-fung in charge of both restau­rants' din­ing pro­grammes, it seems there's room for two. The chef has man­aged to cre­ate a new restau­rant that's dis­tinct and thrilling all on its own, all the while up­ping the game at the orig­i­nal— and be­lieve us, we couldn't help but look ex­tra-hard for things to fault, some­thing that may have helped us dif­fer­en­ti­ate the twin Dragons on a com­pet­i­tive list that's al­ready dif­fi­cult to as­sem­ble.
