here are more than 9,200 kilometres between Bergamo and Macau, the former being t he birthplace of acclaimed chef Umberto Bombana—the man behind this wildly successful fi ne dining Italian restaurant that first made it s mark i n Hong Kong. Taking the helm at the Galaxy Macau outpost of Otto e Mezzo is Antimo Maria Merone, a chef who's as charismatic as his benevolent mentor.
Since the restaurant opened in 2015, it's found its sweet spot. The heavy doors t hat used t o close off t he restaurant t o the shopping centre have been replaced by more welcoming glass frames, with the doorway always open to guests and curious passers-by. It feels more i nclusive and more akin t o Bombana's style of Italian hospitality. The menu i s consistent, with seasonality at its core and homemade pastas as it s foundation.
