One Pek­ing stands ma­jes­ti­cally on prime real es­tate in the heart of Tsim Sha Tsui; on the 30th level is the ul­tra-mod­ish Aqua Spirit, with its con­fi­dent views over­look­ing the har­bour. The light­ing is nec­es­sar­ily dim so as not to dis­tract from the shim­mer­ing view be­yond the floor-to-ceil­ing win­dows—but staff will help­fully pro­vide flash­lights should you have any trou­ble read­ing the menu, which is full of Hong Kong-in­spired li­ba­tions such as the Kowloon Park, a re­fresh­ing mix­ture of Tan­queray gin, peach schnapps, fresh gin­ger, lemon and ap­ple that is candy-sweet. G&T fans will be pleased to see seven dif­fer­ent ton­ics and 17 gins on show. In ad­di­tion to fill­ing up on Ital­ian or Ja­panese bar snacks (such as truf­fle arancini and sun-dried blow­fish), you can or­der from the full menu avail­able to guests din­ing at the Aqua restau­rant be­low.
