Sweep­ing views of the city be­low and a de­cided style-set con­tin­gent en­sure this dis­creet eyrie’s po­si­tion as a peren­nial pick. Perched atop The Up­per House, the bar at Café Gray Deluxe of­fers spec­tac­u­lar Vic­to­ria Har­bour vis­tas from win­dow-side booths while at the same time en­cap­su­lat­ing the in­ti­mate lux­ury the ho­tel is known for. Sip cock­tails from a well-cu­rated list – in­clud­ing those that evoke sis­ter prop­er­ties in Bei­jing and Chengdu – or opt for the en­dur­ing favourite: an exquisitely ex­e­cuted Earl Gray Mar­tini crafted from an el­e­gant Earl Grey-in­fused Beefeater gin with lemon and or­ange. Ac­com­pa­ny­ing bar bites match the bar’s el­e­va­tion – think Smoky Bay oys­ters and an in­trigu­ing foie gras “pineap­ple bun” – while the wine list of­fers an ex­cel­lent se­lec­tion of old and new world wines by the glass.
