This lus­cious oys­ter was one of the ex­quis­ite pearls cre­ated by renowned Cata­lan chef Fer­ran Adrià for This is Not a Din­ner, an ex­clu­sive event staged in the his­toric Yoko­hama Red Brick Ware­house in May to cel­e­brate Dom Pérignon’s newly re­leased Vin­tage 2005. Adrià, whose world-fa­mous restau­rant, El Bulli on Spain’s Costa Brava, served its last meal four years ago, worked his molec­u­lar magic as part of Dom Pérignon De­cod­ing, a three-year project to ex­plore, metaphor­i­cally, the DNA of the elite cham­pagne brand through the prism of the El Bulli thought process. The dishes he cre­ated for the event rep­re­sented the four pil­lars of Dom Pérignon cham­pagne— min­er­al­ity, in­ten­sity, seam­less­ness and har­mony.
