Too elit­ist, too ex­pen­sive—th­ese have long been the com­plaints lev­elled at the sweet wines of Sauternes. But with the in­tro­duc­tion of SO Sauternes in part­ner­ship with bot­tled­wa­ter brand Per­rier, Château Smith Haut Lafitte is seek­ing to re­ju­ve­nate the im­age of botry­tised wines from Bordeaux’s Graves sub­re­gion. The idea is to make a lighter, fruitier, more ac­ces­si­ble Sauternes suit­able for blend­ing with the sparkling wa­ter in the form of a cock­tail. It’s hoped the SO Per­rier will find its way onto the drinks lists of hip bars in Paris and at­tract a younger au­di­ence. The fruit is be­ing sourced from younger vines in low-ly­ing ar­eas from a yet undis­closed num­ber of the re­gion’s first growths, though Château de Rayne-vigneau is said to be on­board.
