50ml gin 10ml green char­treuse 4 sweet peas 1 sprig tarragon 20ml fresh lemon juice 10ml egg white

method

Mud­dle peas and tarragon in­side a shaker. Add all the in­gre­di­ents and dry shake (with no ice) for 30 sec­onds. Add ice to shaker and shake again. Strain and gar­nish with half a pea pod, a cu­cum­ber wheel and pea ten­drils.
