What’s the first thing you no­tice about peo­ple? Their en­ergy. Their move­ment. Whether they’re con­nected to them­selves or not.

What’s your pet peeve? How peo­ple can’t walk in a straight line on a foot­path. And when grannies burp in my ear.

What’s your sig­na­ture dish? I have a love af­fair with pasta aglio, olio e peper­on­cino (gar­lic, olive oil and chilli)—the sim­plic­ity of the dish leaves nowhere to hide; it’s ei­ther in­tensely bril­liant or it’s noth­ing.
