Ltd., Yibin, Sichuan 644007, China) Abstract: The construction of the evaluation system including Daqu flavoring compounds qualification & quantification, and flavor contributions is the most important work in Daqu flavor chemistry research. In this paper, the research progress in flavor chemistry of traditional Daqu was reviewed. The extraction, qualification, and quantification of Daqu flavoring compounds were summed up. The aroma features of the reported typical flavoring compounds were discussed. And the foreground of Daqu flavor chemical analysis was put forward.
