Highlight: Noon is the busiest time of the day. All kinds of retailers hawk their wares in the market. Zhu Jing of Qianjiang Hongshen Trading Company is calling the employees to put a shipment of packaged crayfish into the van. “We need to pack up and deliver 2500 kilograms of crayfish to a catering company in Xuyi County, Jiangsu Province.” Behind him is the sign that reads “Speed up the delivery; nationwide delivery in 18 hours.”
“This market delivers about 200-300 tons of crayfish per day. At peak, the figure can reach 455 tons. We all benefit from the high quality of the crayfish in Qianjiang City.” Hu Jiajun, the chief manager of the Crayfish Trading Center, picked up a crayfish and said that the crayfish in the rice field were all living in clean water. There are no pesticides. Their shells are green, their bellies are white, and their tails are clean and plump. Opening them up, the gill is pale and the flesh is fresh. These are the unique characteristics of the crayfish in Qianjiang.
Qianjiang is the crayfish capital of China and the world. It has won a high reputation of yielding the best crayfish in China.
With events and promotions like the Qianjiang Crayfish Festival and the Online Crayfish Festival, the crayfish craze has swept the country and won fame across the world. Now, in the European market, one out of every four crayfish is from Qianjiang.
At the beginning of 2015, the “Internet + Crayfish” program was promoted in Qianjiang. The off-line brand went online, embracing “Internet+” model that many Chinese industries are moving towards. A promising blueprint of the crayfish business model is taking shape.
At present, there are more than 500 crayfish dealers that are electronic commerce enterprises and online stores. There are also more than 70 delivery enterprises, more than 10 thousand practitioners, and more than 80 thousand internet vendors in Qianjiang City. More than 80% of the processing enterprises and more than 60% of the crayfish restaurants have started online services.
In 2016, crayfish products from Qianjiang City were exported to more than 30 countries and regions in Europe and America, earning 150 million dollars and ranking first in the nation for over a decade. “In a food safety test from 500 different batches, no problems were found. The qualifying rate and customs clearance rate were all 100%,” said Zhou Xi, the director of the manufacturing department of the Qianjiang Bureau of Aquatic Products.
The crayfish sells so well that it contributes to the overall development of the whole industry chain of crayfish, including the cultivation, catering, cold chain logistics park, trading center, and finished chitin packaging.
Qianjiang, the hometown of crayfish, is the only chitin finishing base in the entire country. Since 1997, research on the finishing and selling of chitin has been conducted by universities, enterprises, and the government in a cooperative model, turning chitin from waste into wealth and Qianjiang into “the World’s Capital of Chitin.” Chitin is a product that serves many uses that is made from shellfish byproducts. In the year 2016, Huashan Aquatic Food and Products Co. Ltd, the leading enterprise dealing with chitin, has an annual output of 4,000 tons of chitin and 3,500 tons of high value-added byproducts, such as glucosamine hydrochloride, high density chitosan and chitooligosaccharide, which amounts to a value of production of 2 billion yuan in total.
