[ The Whole In­dus­try Chain of Qian­jiang Cray­fish ]

High­light: Noon is the busiest time of the day. All kinds of re­tail­ers hawk their wares in the mar­ket. Zhu Jing of Qian­jiang Hong­shen Trad­ing Com­pany is call­ing the em­ploy­ees to put a ship­ment of pack­aged cray­fish into the van. “We need to pack up and de­liver 2500 kilo­grams of cray­fish to a cater­ing com­pany in Xuyi County, Jiangsu Prov­ince.” Be­hind him is the sign that reads “Speed up the de­liv­ery; na­tion­wide de­liv­ery in 18 hours.”

“This mar­ket de­liv­ers about 200-300 tons of cray­fish per day. At peak, the fig­ure can reach 455 tons. We all ben­e­fit from the high qual­ity of the cray­fish in Qian­jiang City.” Hu Ji­a­jun, the chief man­ager of the Cray­fish Trad­ing Cen­ter, picked up a cray­fish and said that the cray­fish in the rice field were all liv­ing in clean wa­ter. There are no pes­ti­cides. Their shells are green, their bel­lies are white, and their tails are clean and plump. Open­ing them up, the gill is pale and the flesh is fresh. These are the unique char­ac­ter­is­tics of the cray­fish in Qian­jiang.

Qian­jiang is the cray­fish cap­i­tal of China and the world. It has won a high rep­u­ta­tion of yield­ing the best cray­fish in China.

With events and pro­mo­tions like the Qian­jiang Cray­fish Fes­ti­val and the On­line Cray­fish Fes­ti­val, the cray­fish craze has swept the coun­try and won fame across the world. Now, in the Euro­pean mar­ket, one out of ev­ery four cray­fish is from Qian­jiang.

At the be­gin­ning of 2015, the “In­ter­net + Cray­fish” pro­gram was pro­moted in Qian­jiang. The off-line brand went on­line, em­brac­ing “In­ter­net+” model that many Chi­nese in­dus­tries are mov­ing to­wards. A promis­ing blueprint of the cray­fish busi­ness model is tak­ing shape.

At present, there are more than 500 cray­fish deal­ers that are elec­tronic com­merce en­ter­prises and on­line stores. There are also more than 70 de­liv­ery en­ter­prises, more than 10 thou­sand prac­ti­tion­ers, and more than 80 thou­sand in­ter­net ven­dors in Qian­jiang City. More than 80% of the pro­cess­ing en­ter­prises and more than 60% of the cray­fish restau­rants have started on­line ser­vices.

In 2016, cray­fish prod­ucts from Qian­jiang City were ex­ported to more than 30 coun­tries and re­gions in Europe and Amer­ica, earn­ing 150 mil­lion dol­lars and rank­ing first in the na­tion for over a decade. “In a food safety test from 500 dif­fer­ent batches, no prob­lems were found. The qual­i­fy­ing rate and cus­toms clear­ance rate were all 100%,” said Zhou Xi, the di­rec­tor of the man­u­fac­tur­ing depart­ment of the Qian­jiang Bureau of Aquatic Prod­ucts.

The cray­fish sells so well that it con­trib­utes to the over­all devel­op­ment of the whole in­dus­try chain of cray­fish, in­clud­ing the cul­ti­va­tion, cater­ing, cold chain lo­gis­tics park, trad­ing cen­ter, and fin­ished chitin pack­ag­ing.

Qian­jiang, the home­town of cray­fish, is the only chitin fin­ish­ing base in the en­tire coun­try. Since 1997, re­search on the fin­ish­ing and sell­ing of chitin has been con­ducted by uni­ver­si­ties, en­ter­prises, and the gov­ern­ment in a co­op­er­a­tive model, turn­ing chitin from waste into wealth and Qian­jiang into “the World’s Cap­i­tal of Chitin.” Chitin is a prod­uct that serves many uses that is made from shell­fish byprod­ucts. In the year 2016, Huashan Aquatic Food and Prod­ucts Co. Ltd, the lead­ing en­ter­prise deal­ing with chitin, has an an­nual out­put of 4,000 tons of chitin and 3,500 tons of high value-added byprod­ucts, such as glu­cosamine hy­drochlo­ride, high den­sity chi­tosan and chi­tooligosac­cha­ride, which amounts to a value of pro­duc­tion of 2 bil­lion yuan in to­tal.
