The Gin Factor
By drawing inspiration from their love for a good gin and tonic, the owners of Japanese fine dining establishment Kishoku have teamed up with mixology maestro Antonio Lai to launch Hong Kong’s first gin omakase experience. Award-winning Lai, known for his inventive use of liquors, accents the refined Japanese cuisine with a range of in-house infused gin. Available during dinner services only, patrons can choose from the four omakase sets; namely Ki, Sho, Ku and Kishoku. The shiso gin brings out the fresh flavours of sashimi, while the menu’s main dish comes served alongside a grapefruit infused gin to balance the palate. Mimicking the traditional post-meal cup of tea, a fragrant Earl Grey gin serves as a delightful dessert with a twist.
