SW’S now-renowned fish pro­gram fol­lows the Wynn tra­di­tion of sourc­ing the fresh­est in day boat catches, pre­pared sim­ply. In Las Ve­gas, SW sources its fish from Hawai­ian wa­ters; SW Wynn Palace takes its fre­quent de­liv­er­ies from New Zealand and Aus­tralia.
