The plant-based “meat,” from the Cal­i­for­nia-based com­pany Im­pos­si­ble Foods, is fea­tured in three dishes at An­drea’s—thai Crispy Rice Cups, sliders, and Ma Po Tofu, a unique take on tra­di­tional meat­balls—all of which, Ex­ec­u­tive Chef Joseph El­e­vado says, “show­case both the prod­uct and the restau­rant’s el­e­vated ap­proach to­ward in­no­va­tion.” At An­drea’s in Wynn Palace in Co­tai, mean­while, guests can feel like they’re eat­ing straight from the gar­den with this tofu chrysan­the­mum soup. Rep­re­sen­ta­tive of Huaiyang-style cook­ing, the soup is pre­pared with fresh Aus­tralian abalone and 400–500 del­i­cate hand-cut slices of tofu.
