New sea­sonal kaiseki menus were launched at Mizumi at Wynn Palace to rave re­views this sum­mer. Ex­plains Mizumi’s chef Min Kim, “The kaiseki menu is a highly re­spected style of cook­ing in Ja­pan, which has been evolv­ing over the years. Kaiseki em­pha­sizes the sea­son­al­ity and fresh­ness as well as pre­serv­ing the orig­i­nal taste of the in­gre­di­ents.” Con­tin­u­ing into fall, Kim is us­ing au­tum­nal in­gre­di­ents like mat­su­take mush­rooms and sweet pota­toes. “Kaiseki re­flects the most tra­di­tional and el­e­gant Ja­panese cui­sine that bal­ances the taste, tex­ture and pre­sen­ta­tion and color of each dish,” says the chef. “Well-bal­anced dishes com­ple­ment each other to cre­ate a sense of har­mony and please the palate.”
