As a child in World War II, I was aware of the many ships sunk by Ger­man sub­marines whilst cross­ing the At­lantic car­ry­ing es­sen­tial food for be­lea­guered Bri­tain, with the loss of thou­sands of sailors’ lives. I thought it ter­ri­ble and tried to grow as many veg­eta­bles as pos­si­ble in the small gar­den be­hind our house. It be­came very pa­tri­otic to “and pro­duce our own food.

In th­ese tough days for Cyprus, it is good eco­nomic sense to eat lo­cally pro­duced food if we can. My four recipes this week are all easy pre­pared from pro­duce “Make sure your wine is, too!
