No pu­di­mos ha­ber te­ni­do me­jor alia­do. Ho­te­lier, tou­rism ex­pert and all-round bon vi­vant, Fer­nan­do “Ta­to” Del­ga­do con­tri­bu­ted his know­led­ge and pas­sion for Ecua­do­rian cooking in this is­sue, with his co­lla­bo­ra­tion on our spread “The Qui­to ta­ble”. We couldn’t ha­ve ho­ped for a mo­re qua­li­fied ally.
