Chef: Head chef Saeri Kim
Experience: Have worked at many restaurants in Australia where she learned about authentic Italian food and coffee for more than five years. She also learned Japanese cooking in Japanese restaurants. Before going into Awesome Grill, he was one of the main chefs at Grace Road Kitchen.
Background: Chef Kim was born in South Korea and spent her time as a 20-year-old in Australia. She didn’t do a major in cooking but had a passion for cooking and food. So she decided to be involved in working with food. “The most exciting part of creating our homemade dishes in Grace Road Kitchen and Awesome Grill was developing such recipes without using any chemical seasonings,” she said. Chef Kim said as Christians, their company, Grace Road Group sows and reaps its own plants, manufactures the food, and even sells the products all according to the Bible. “Grace Road Group’s food philosophy of ‘Good food can heal all diseases’, displays our desire to provide healthy and fresh food for the people. “This surpassed all the knowledge about cooking that I have learned up until now; for this, I needed to study and research deeply. I faced many difficult challenges but I received new, exciting challenges and joy just knowing that we were providing healthier and tastier food for the people. And finally, I was able to create many recipes for sauces by using only all-natural ingredients.”
Cooking in Fiji: “I faced the difficulty of purchasing various types of vegetables and fruits compared to purchasing them in Korea or in Australia.
“I believe that Fiji must increase their production not only in rice, but as well as in vegetables and fruits. And I tried to use locallygrown vegetables and fruits to develop new menus for our restaurants. For example, cassava is a plant that had a high usage in developing all of our main dishes, dessert and sauces. I used, of course, seasonally and locally grown fruits to create our homemade juice.
