Ex­pe­ri­ence: Have worked at many restau­rants in Aus­tralia where she learned about au­then­tic Ital­ian food and cof­fee for more than five years. She also learned Ja­panese cook­ing in Ja­panese restau­rants. Be­fore go­ing into Awe­some Grill, he was one of the main chefs at Grace Road Kitchen.

Back­ground: Chef Kim was born in South Korea and spent her time as a 20-year-old in Aus­tralia. She didn’t do a ma­jor in cook­ing but had a pas­sion for cook­ing and food. So she de­cided to be in­volved in work­ing with food. “The most ex­cit­ing part of cre­at­ing our home­made dishes in Grace Road Kitchen and Awe­some Grill was de­vel­op­ing such recipes with­out us­ing any chem­i­cal sea­son­ings,” she said. Chef Kim said as Chris­tians, their com­pany, Grace Road Group sows and reaps its own plants, man­u­fac­tures the food, and even sells the prod­ucts all ac­cord­ing to the Bi­ble. “Grace Road Group’s food phi­los­o­phy of ‘Good food can heal all dis­eases’, dis­plays our de­sire to pro­vide healthy and fresh food for the peo­ple. “This sur­passed all the knowl­edge about cook­ing that I have learned up un­til now; for this, I needed to study and re­search deeply. I faced many dif­fi­cult chal­lenges but I re­ceived new, ex­cit­ing chal­lenges and joy just know­ing that we were pro­vid­ing health­ier and tastier food for the peo­ple. And fi­nally, I was able to cre­ate many recipes for sauces by us­ing only all-nat­u­ral in­gre­di­ents.”

Cook­ing in Fiji: “I faced the dif­fi­culty of pur­chas­ing var­i­ous types of veg­eta­bles and fruits com­pared to pur­chas­ing them in Korea or in Aus­tralia.

“I be­lieve that Fiji must in­crease their pro­duc­tion not only in rice, but as well as in veg­eta­bles and fruits. And I tried to use lo­cal­ly­grown veg­eta­bles and fruits to de­velop new menus for our restau­rants. For ex­am­ple, cas­sava is a plant that had a high us­age in de­vel­op­ing all of our main dishes, dessert and sauces. I used, of course, sea­son­ally and lo­cally grown fruits to cre­ate our home­made juice.
