A MA­JOR PART OF THE BORDEAUX RE­GION'S CUL­TURAL RE­NAIS­SANCE over the last two decades has been the trend to­wards farm-to-ta­ble cui­sine and the art of food and wine pair­ings. This foodie revo­lu­tion has at­tracted many tal­ented chefs, many of whom of­fer vis­i­tors cook­ing classes. Wine pair­ings not to be missed!

Whether you're a pas­sion­ate am­a­teur cook or culi­nary neo­phyte, there's a cook­ing course for you. You'll find classes fo­cused on wine and food pair­ing, oth­ers on culi­nary tech­niques and lo­cal pro­duce. Chateaux, ho­tels and restau­rants of­fer mem­o­rable ex­pe­ri­ences un­der the guid­ance of ex­pert chefs. Here are a few high­lights:

◆ Château Kir­wan

Château Kir­wan is a clas­si­fied growth in Mar­gaux, one of the great his­toric es­tates. The es­tate is one of the lead­ers in wine tourism, and of­fers cook­ing classes with the per­son­able chef Stephanie Bot­treau, owner of Cook N'tinem. The course in­cludes a wine tast­ing over lunch and tour of the beau­ti­ful es­tate. Costs for 2-4 peo­ple, €127/per­son; 5+ peo­ple, €112/per­son.

◆ Château Phélan Ségur

Chateau Phélan Ségur of­fers cook­ing cour­ses with Chef Jimmy De­lage. They school you in the great clas­sics of gourmet French cui­sine. The pro­pri­etors of Phélan Ségur also own Miche­lin starred restau­rants, and De­lage has reg­u­larly trained with Miche­lin starred chefs. The cook­ing course lasts two hours, and is ac­com­pa­nied by a visit of the win­ery and a tast­ing of three vin­tages, fol­lowed by a cham­pagne aper­i­tif. The lunch, pre­pared in the cook­ing course, is served with two vin­tages from among the es­tate's wines. Costs 200 €/per­son.

◆ Hô­tel Château Cordeil­lan-bages

The new chef at the lux­ury ho­tel Cordeil­lan-bages, Julien Le­feb­vre, of­fers cook­ing cour­ses for 1 – 4 par­tic­i­pants in the kitchen at Cordeil­lan-bages. Le­feb­vre fo­cuses on sea­sonal pro­duce as well as à la carte themes. The course in­cludes three recipes and lasts 2.5 hours. A tast­ing fol­lows the cook­ing ses­sion. Wine and food pair­ing cour­ses are also. avail­able. The price is 80€ per per­son and with wine pair­ing 120€ per per­son. From 3:30 -6 PM, Wed­nes­day thru Sun­day, based on avail­abil­ity. ◆ Hô­tel Saint James

The Re­lais & Chateaux Ho­tel Saint James, with its stun­ning view of Bordeaux from its perch in Bouilac, of­fers cook­ing classes with sous chef Celia Gi­rard, who works un­der Miche­lin starred chef Ni­co­las Magie. The culi­nary pro­gram of­fers seven classes a week, with be­spoke classes avail­able on re­quest. The themed classes change fre­quently, so check their on­line sched­ule. Prices range from 45 €/per­son for a re­lax­ing Fri­day evening of canapés and wine to a 155 €/per­son 'Comme au Saint James' on Satur­day morn­ing.

◆ Château Dauzac

Chatau Dauzac has won awards for its up­scale and con­vivial tourism ac­tiv­i­ties around wine and food, in­clud­ing learning how to blend wine, har­vest honey and pair Wagyu beef with aged Dauzac wines. Set in a splen­did park, Dauzac or­ga­nizes cook­ing classes with their chef in the chateau or in the 'Panoramic' room. Open Mon­day to Satur­day, 10 AM to 6PM, May to Oc­to­ber. ◆ Bordeaux River Suite

Sylvie Cazes, the owner of Le Chapon Fin, the iconic restau­rant next to Grands Hommes in Bordeaux's famed 'tri­an­gle' of lux­ury bou­tiques, of­fers cook­ing classes with Chef Ni­co­las Nguyen Van Hai and other chefs at Bordeaux River Suite, with a panoramic view of the quays and river. As with the com­pany's be­spoke wine tours, the cook­ing cour­ses can be adapted to clients' re­quests. For guests stay­ing in the twobed­room lux­ury flat, a cook­ing course with a lo­cal chef costs 148 €/per­son, based on 4 peo­ple.
