Is­raeli chef Gil Elad and French­man Ar­naud La­haut helped launch one of Bordeaux’s gas­tro­nomic stars, Miles. 2016 saw the open­ing of their re­fined street-food restau­rant, Mam­puku, mean­ing ‘full belly’ in Ja­panese. Take a whistlestop tour of Asia and the Mid­dle East, from Ja­pan to Le­banon, via Viet­nam, Tahiti and Is­rael. Sig­na­ture dishes in­clude crunchy chicken mari­naded in gin­ger-saké­gar­lic-soy and Bao - steamed brioche stuffed with slow-cooked beef served with lemon and peanuts. Desserts are equally ex­otic, try the fried pineap­ple with peanut ice-cream.
