For about 40 cook­ies Prep time: 35 min Cook­ing time: 25 min 250 g of brown caster sugar, 125 g of caster sugar, 1 bag of vanilla sugar, 310 g of flour, 1 tsp. of pow­dered cin­na­mon, 1 bag of bak­ing pow­der, 2 eggs, 7 tbsp. of sun­flower oil, 250 g of co­conut (grated), 250 g of raisins, 300 g of oat flakes.

• Grab a salad bowl and mix to­gether all the sug­ars, in­clud­ing the vanilla one. Mix to­gether flour, bak­ing pow­der and cin­na­mon in another salad bowl, then add the sugar mix­ture. Whip the eggs and the oil to­gether. In­cor­po­rate into the dry mix­ture, stir­ring con­stantly un­til smooth. • Add the raisins, co­conut and oat flakes. Pre­heat the oven to 200°C (Gas 6-7). • Use a small spoon to make 50 cook­ies out of the bat­ter. Make the cook­ies on a bak­ing tray lined with grease­proof pa­per. Bake for 25 min­utes. Let cool be­fore serv­ing.
