For about 40 cookies Prep time: 35 min Cooking time: 25 min 250 g of brown caster sugar, 125 g of caster sugar, 1 bag of vanilla sugar, 310 g of flour, 1 tsp. of powdered cinnamon, 1 bag of baking powder, 2 eggs, 7 tbsp. of sunflower oil, 250 g of coconut (grated), 250 g of raisins, 300 g of oat flakes.
• Grab a salad bowl and mix together all the sugars, including the vanilla one. Mix together flour, baking powder and cinnamon in another salad bowl, then add the sugar mixture. Whip the eggs and the oil together. Incorporate into the dry mixture, stirring constantly until smooth. • Add the raisins, coconut and oat flakes. Preheat the oven to 200°C (Gas 6-7). • Use a small spoon to make 50 cookies out of the batter. Make the cookies on a baking tray lined with greaseproof paper. Bake for 25 minutes. Let cool before serving.
