One of the great Blanc de blancs out there, with a sub­tle and re­fresh­ing char­ac­ter. Golden robe with green high­lights en­hanced by an abun­dant and fine bub­ble. The nose is straight­for­ward and pure, open­ing with notes of white flow­ers, orange blos­som and jas­mine and some slight notes of mint and Wil­liams pears. The at­tack re­veals an ex­plo­sion of fla­vor, hit­ting with ripe and fresh grapes with hints of honey and cit­rus fruits. Ideal for ap­pe­tiz­ers with Ja­mon Iberico, parme­san chips and crispy radishes. Goes well along­side a mush­room fric­as­see with soft-boiled eggs or lan­goustines in salted but­ter. Dessert pair­ings in­clude pear and apri­cot cakes. 52€
