Our journey takes us into the heart of the countryside. The road twists and turns, protected by the shade of pines and oaks. Rising above the medieval village of Arcs sur Argens is a splendid stone bastide that dominates even the nearby Massif des Maures. Here, in a place that’s a stone’s throw away from Sainte-Maxime and Saint-Tropez, Sébastien Sanjou, the young Michelin-starred chef of the Relais des Moines, welcomes us into a world of pleasure for the senses. The chef’s passion for vegetables and terroir ingredients (especially the Southern terroirs) reflects perfectly on his divine dishes. In creating them, he relies on both Southern inspirations, as well as inspirations from the West (from where he originates) and East (which he also has a passion for). The chef’s desire for quality is as solid as the walls of the bastide. As such, he has surrounded himself with producers that have the same level of respect for seasonal ingredients as he does: Philippe Auda for vegetables, Pierre Duplantier for his Landes poultry... Sébastien’s unbound creativity gives his cuisine a contemporary touch with strong traditional roots. But enough talk. It’s time to let his dishes speak for themselves. Bon appétit!
