Our jour­ney takes us into the heart of the coun­try­side. The road twists and turns, pro­tected by the shade of pines and oaks. Ris­ing above the me­dieval vil­lage of Arcs sur Ar­gens is a splen­did stone bastide that dom­i­nates even the nearby Mas­sif des Mau­res. Here, in a place that’s a stone’s throw away from Sainte-Maxime and Saint-Tropez, Sébastien San­jou, the young Miche­lin-starred chef of the Re­lais des Moines, wel­comes us into a world of plea­sure for the senses. The chef’s pas­sion for veg­eta­bles and ter­roir in­gre­di­ents (es­pe­cially the South­ern ter­roirs) re­flects per­fectly on his di­vine dishes. In cre­at­ing them, he re­lies on both South­ern in­spi­ra­tions, as well as in­spi­ra­tions from the West (from where he orig­i­nates) and East (which he also has a pas­sion for). The chef’s de­sire for qual­ity is as solid as the walls of the bastide. As such, he has sur­rounded him­self with pro­duc­ers that have the same level of re­spect for sea­sonal in­gre­di­ents as he does: Philippe Auda for veg­eta­bles, Pierre Duplantier for his Lan­des poul­try... Sébastien’s un­bound cre­ativ­ity gives his cui­sine a con­tem­po­rary touch with strong tra­di­tional roots. But enough talk. It’s time to let his dishes speak for them­selves. Bon ap­pétit!
